Carlos, How did you get started?
Im studying food technology, where i’ve aquired plenty of knowledge about food and food chemistry. Sometimes I still tend to get lazy and not follow what I know I should. One night as I’m eating a chicken sandwich, my roomate suggested that I should put some salad between it and that overall I should eat more greens. Later I went to the store to pick up some salad and I saw Scandic Organic Shiitake mushrooms.
What is your mission in our team?
My job is to find the best and most cost-efficient growing conditions and produce the most top-quality product we can. The process begins at a microscopic level in our lab under a clean air filter, that’s where I step in and look for the best genetics. After that I test them on different kinds of substances (coffee, sawdust, hemp etc.)
What is your biggest inspiration?
I’m a very scientific person and mushrooms as an organism are mind-blowing to me. I want to do my part in bringing mushrooms to the table and help spread information about the positive aspects of mushrooms to our well-being as well as the ecological systems that surround us. I wish the knowledge we have about the use of mushrooms was much more common.
What is your ideal version of the future?
In my perfect future scenario every person’s diet should include at least a handful of mushrooms every day. There have been hundreds of scientific papers on the power of certain mushroom species to combat genetic disorders, for example cancer. Also mushrooms increase the production of white blood-cells. Overall people should prioritise their health more.
